Tapioca Maltodextrin

The product is used as a fat replacement in desserts, cheese products, ice cream, baby foods, dressings and sauces. Higher conversion maltodextrins are used as bulking agents in dry seasonings and as a flavor carrier in spray-dry applications. Its neutral flavor quality makes it an excellent flavor-release agent.  Other benefits include a smooth texture, cold-water gelling ability, high water binding capability, and freeze/thaw stability. The powder's white color and minimal application rate of 2% to 10% makes it an excellent substitute for fats, milk, gums, and other stabilizers.
