Are there different varieties of agave, and if so, how do they differ?

There are two different types of agave plant used to make syrup:  the Blue Weber and the Salmiana.  Processing is similar in both types.  The Blue Weber tends to have a higher amount of fructose and is sweeter than Salmiana syrup.
