How is tapioca syrup different than other syrups, like brown rice syrups?

Tapioca is generally cleaner tasting and clearer than rice syrups.

Also, tapioca syrup does not contain residual oils or proteins that may be found in some rice syrups.  This means the tapioca is a simpler ingredient, with characteristics defined only by the saccharides of the source starch and no secondary characteristics due to minor components of the source material.  I n addition, at low DEs, the specific qualities of the tapioca starch lend certain abilities to the syrups and maltodextrins, such as filming and syneresis control.
