Sometimes I see a white coating on chocolate. Is it edible?

It is most likely chocolate bloom, which indicates that the finished chocolate product was exposed to too much heat or lengthy storage. As a result, the cocoa butter particles separate from the rest of the chocolate ingredient mix and settle at the surface.  When chocolate blooms, it is still edible, but to be used in consumer products, the chocolate must be tempered again.
