What is the difference between DE 10 and DE 16 tapioca maltodextrin?

Ciranda's DE 10 tapioca maltodextrin has more viscosity and is a slightly better carrier for drying than the DE 16 variety. The DE 10 is also more difficult to disperse in liquids.
