What does cocoa content mean?

Chocolate products usually specify a percentage of cocoa content. This number identifies the total percentage of all cocoa-originated ingredients including cocoa liquor, cocoa nibs, cocoa powder, and cocoa butter. In dark chocolate products, ingredients that are not part of the cocoa content (adding up to 100%) are usually represented by sugar, soy lecithin (<0.5%), and vanilla (<0.1%). Our bittersweet chocolate couverture has a cocoa content of 70%, consisting of cocoa liquor and cocoa butter.
