Cocoa Liquor Blocks
This economical product is very similar to the liquor wafers.  It is fruity, full bodied cocoa liquor made from Peruvian beans at a Peruvian manufacturer, with a relatively high cocoa butter content (54% +/- 2%). Sold in solid block form. It has the best quality to price ratio.

Cocoa Liquor Chips
The same organic cocoa liquor is available in chip form.

After the harvest, the cocoa beans are removed from the pods, fermented for 5 to 8 days, then dried. At the manufacturer, the beans are sorted, cleaned, pre-roasted, de-shelled, broken into nibs, roasted and finally ground to a paste which is called cocoa liquor. The liquor is boxed in block form or deposited as wafers and cooled.
