Our richest cocoa powder product, the premium quality alkalized cocoa powder has a cocoa butter content of 20 to 22% to provide maximum flavor. The product is made predominantly from Dominican Republic beans. It is also available with Fair Trade certification produced from100% Dominican bean product.
After the cocoa pods are harvested, the beans are removed and fermented for 5 to 8 days, then dried. At the manufacturer, the beans are sorted, cleaned, pre-roasted, de-shelled, broken into nibs, roasted again and finally ground to a paste which is called cocoa liquor. Cocoa liquor is treated with potassium carbonate, an alkalizing/dutching agent, and then run through a hydraulic press to separate into cocoa powder cake and cocoa butter until the 20 to 22% fat level in the cocoa powder is reached. The cocoa powder cake is finely ground and packed.
