Ciranda offers two varieties of natural cocoa powder with 10 to 12 percent cocoa butter content:
Cocoa Powder Natural 10/12 – Gold
A full bodied, balanced, organic natural (non-alkalized) cocoa powder made predominantly from Dominican Republic beans. Also available with Fair Trade certification using 100% Dominican beans.
Cocoa Powder Natural 10/12 – Silver
A flavorful, economically priced, organic natural (non-alkalized) cocoa powder with the best quality to price ratio. Our "silver" cocoa powders are single source origin, grown and processed in Peru. Also available with Fair Trade certification.
After the harvest, the cocoa beans are removed from the pods, fermented for 5 to 8 days, then dried. At the manufacturer, the beans are sorted, cleaned, pre-roasted, de-shelled, broken into nibs, roasted, and finally ground to a paste called cocoa liquor. Cocoa liquor is then separated by a hydraulic press into cocoa powder cake and cocoa butter until the 10 to 12% fat level in the cocoa powder is reached. The cocoa powder cake is finely ground and packed.
