This premium quality natural cocoa powder delivers maximum flavor with a cocoa butter content of 20 to 22%. The cocoa is made predominantly from Dominican Republic beans. It is also available with Fair Trade certification produced from 100% Dominican beans.
After the cocoa pods are harvested, the beans are removed and fermented for 5 to 8 days, then dried. At the manufacturer, the beans are sorted, cleaned, pre-roasted, de-shelled, broken into nibs, roasted, and finally ground to a paste which is called cocoa liquor. A hydraulic press then separates the cocoa liquor into cocoa powder cake and cocoa butter until the 20 to 22% fat level in the cocoa powder is reached. The cocoa powder cake is finely ground and then packed.
