Using meticulous organic farming methods, advanced sustainable technology and the experience of Old and New World chocolatiers, we present you with the finest cocoa ingredients. Organic chocolate quality starts with healthy soil, the best varieties and careful attention from the farmer. Our cocoa beans are supplied by over 600 small scale organic farmers who are partners in the Yacao project in the Dominican Republic. These farmers are supported in their work of producing healthy high quality cocoa with technical support by organic agronomists, a tree nursery for seedlings and fair pricing. The farmers nurture the trees, hand pick the cocoa pods and separate out the beans for fermenting. After a carefully controlled fermentation process, the cocoa beans are dried by an advanced design solar heated air system and then shipped to the best chocolate manufacturers for processing into cocoa liquor, butter and powder, chips and coatings.
C0C0A BUTTER is the natural, cream-colored vegetable fat extracted from the cocoa liquor. It is available in both natural and deodorized (neutral flavor) forms. It adds smoothness and flavor to chocolates and is also used in the body care industry. C0C0A P0WDER is available in natural and alkalized (Dutch process) grades and in two fat levels. Alkalized cocoa is a bit more soluble, slightly darker in color, milder in taste and has a more neutral pH. The low fat cocoa powder contains 10-12% of cocoa butter and is used in a wide rage of products including dairy and soy based drinks, baked goods and ice creams. The high fat cocoa powder contains 20-22% of cocoa butter and due to the extra fat carries fuller flavor. CHOCOLATE COATING, CHIPS AND WAFERS are used for coating cookies, cakes and making finished chocolates. Available in milk, dark and dark espresso chocolate. This product is available as wafers and chips (1000, 2000 and 4000 chips/pound). Specialty Bake Stable chips are also available.
