Baking powder is a key ingredient to improve the volume and texture of baked goods. Its function comes from the reaction that occurs between the weak acid and weak alkali (typically sodium bicarbonate) as liquid is added to the formula. Starch is used as the base and acts as a drying agent and buffer between the two salts. 

Nearly all baking powders sold on the market today use corn starch as the base ingredient. Ciranda's Non-GMO Project Verified baking powder uses organic potato starch as the base, creating a single acting baking powder with double function.

Potato starch is a highly functional starch with superior water binding properties. It swells at low temperatures and forms a protective film around the gas bubbles during leavening which prevents the gas from escaping and the dough from falling. It's film-forming properties also create a protective barrier around the crust to reduce moisture migration. This double function creates baked goods with a crisp exterior and a moist, tender crumb.

*This product is certified EU Organic, but does not qualify for NOP Organic certification due to the use of sodium bicarbonate (baking soda) and tartaric acid (cream of tartar).
