Bananas naturally contain starches which convert to sugars during ripening. Organic green banana flour is produced from green, unripe bananas before the starches have converted, yielding a functional, gluten-free flour with a high percentage of starch.
Ciranda supplies organic green banana flour and whole green banana flour, both produced in Peru from cut bananas which have been gently dried and milled. Our whole green banana flour is dried and milled with the peel still intact for an extra boost of fiber.
Organic green banana flour has a slightly sweet, earthy flavor that complements a variety of bakery and snack applications. Try it in gluten-free waffle, pancake and muffin mixes, or in crackers, biscuits and cereals.
Concerned about food waste? As grocery markets continue to demand fruit of a particular size, shape and ripeness, bananas are high on the list for food waste. Green bananas which would normally be rejected for the fresh fruit market due to slight blemishes or unusual shapes are able to be used in the production of green banana flour, allowing farmers to receive an income from their entire crop.
