Organic pea flour is the flour that results from dried and de-hulled brown peas after they have been air-classified to extract the pea protein. Pea flour is a functional flour containing approximately fifteen percent remaining protein, fiber, and a high percentage of starch for added functionality.
While organic pea flour is used in a variety of gluten-free applications including baking mixes, pasta and extruded snacks, it may also be useful in applications using grain flours. Cereal grains and leguminous flours have complimentary amino acid profiles, creating products with a more rounded nutritional profile.
Brown peas, commonly called grey peas in Latvia, are part of an organic and sustainable farming practice. In the Baltic Sea region where our pea flour is produced, farmers use peas, fava beans and red clover to fix nitrogen in the soil during crop rotations with the starch potatoes used to produce our organic potato starch.
