Organic palm kernel stearin is the non-hydrogenated fat fraction of organic palm kernel oil. It is cream-to-light yellow in color, and solid at room temperature with a sharp melting curve.
Palm kernel stearin is also known as cocoa butter extender. When combined with cocoa butter at 5% or less, it helps to maintain the integrity of chocolate at temperatures where cocoa butter may begin to break down. Palm kernel stearin is commonly used for chocolate confectionery coatings and enrobing. It stabilizes drizzles and icings on bars and snacks.
