Lecithin

Lecithin is a naturally occurring substance found in the membranes of living cells. Commercial lecithin is extracted from plant and animal sources such as soybeans and sunflower seeds.

Lecithin consists of a complex mixture of both hydrophobic (oil friendly) and hydrophilic (water friendly) lipids. The unique combination of lipids makes it a powerful emulsifier in numerous food and beverage applications. Beyond emulsification, lecithin also acts as a release agent, shelf life extender, viscosity modifier and wetting/instantizing agent.

In baked goods, lecithin is particularly advantageous. A small amount of lecithin added to a formula aids in ingredient distrubution, conditions and stabilizes the dough system, improves texture, creates uniform browning, and improves machinability. In frozen doughs, lecithin ensures the formation of fine ice crystals which is critical during the deep freeze process.
